Linguine with Shellfish and Creole Sauce
serves 4
Ingredients
- 1 lb linguine, cooked
- 1 dz. mussels
- 1/2 lb large shrimp, peeled
- 1 T shallots, minced
- 1/2 t garlic, minced
- 1/2 C dry white wine
- 1 C fresh tomatoes, seeded, skinned, diced
- 1 T butter
- 1 T fresh parsley, chopped
- 1 T fresh cilantro, chopped (optional)
Instructions
- Saute the shallots and garlic until fragrant, then add the wine, mussels and shrimp, cover, and cook until mussels have opened.
- Add the tomatoes, simmer for 5 minutes, and season to taste.
- Add the parsley, and butter, and toss with the linguini.
- Plate and serve.
